Chopped “Cooking Caribbean” was Great! Even Better with #CaribbeanTwitter.

If you’re a foodie, most likely you were like me on Tuesday night in front of the television or mobile device watching the newest episode of Chopped on The Food Network.

This episode was especially exciting as the theme was “Cooking Caribbean” and featured three chefs from the Caribbean.  Chef Keisha Bocage, originally from Trinidad, now Owner and Executive Chef of Bocage Catering in Houston; Chef Brandon Soverall also from Trinidad, also working in Houston as Chef de Cuisine at Triniti Restaurant and finally Chef Andre Fowles, native of Jamaica and Sous chef at Miss Lilly’s in NYC.

Caribbean Food, Wine and Rum Festivals in 2016

Everyone’s gearing up for Carnival season throughout the Caribbean ensuring bodies are “tight” for  costumes and fete outfits. And while we at Eat The Caribbean love a great fete, we are truly looking  forward to all of the great food, wine and rum festivals scheduled.

We don’t need to worry about getting in shape for these festivals. All we need is our appetites, loose clothing and maybe a designated driver.

This list features just a few  food festivals, so it can be considered “ETC’s Food Festival Wish List 2016”.

Yes Chef! with Chef Jason Howard

In our latest installment of Yes Chef! we speak with Chef Jason Howard of Barbados. Since arriving in the UK, Chef Howard has transformed Caribbean food from the street to fine dining. As the head chef at The Froottree restaurant in London, he promises “…. you’ll see great things and Caribbean food never seen and tasted before, but still embodying the Caribbean flavours and history.”

As a private chef, his delicacies have been requested throughout The Bahamas and the Caribbean and as an advocate of Farm to Table cuisine, Chef Hall educates everyone – including fellow chefs – on a style he describes as “simply using local ingredients with global techniques”.  He has hosted a series of pop-up events in partnership with other local chefs that have received rave reviews.

This week’s recipe comes from Chef Jamila De Souza. Growing up in a Trinidadian and Bajan family, the Trinidad native creates boldly flavored, deeply satisfying dishes for her family and clients.

Jamila’s love of cooking goes back before working as a pastry chef or as a teen.  She knew she wanted to cook when she was 5 years old.

Once Jamila finished her formal education in high school, she immediately enrolled in the Youth Training Employment and Partnership Programme (YTEPP), where she studied catering and cake making and excelled. Jamila then worked as a lead cook in several establishments for about 10 years before retiring to start her own catering business.
